EASY Baked Chicken Dinner

Recently, I've been teaching myself to adapt to what we have by using up our groceries to the very last bit before we go shopping again. I spoiled myself by always just feeling like I could make anything if I just go get the stuff haha. This is a skill I've taken for granted.


Tonight's dinner was juicy, delicious, easy AND under $10! I literally just had to buy the chicken and the sides. Each item was under $5! I only spent about $10 total! Depending on the sides YOU choose, there's no way you'll spend more than $15 on this dinner. With that being said, let's dive on in!


Ingredients

  • 2 tbsp. olive oil

  • 2 tsp. garlic powder

  • 2 tsp. onion powder

  • 1 tsp. paprika

  • 1 tsp. dried parsley

  • 1 tsp. dried oregano

  • 2 tsp. salt

  • 1/2 tsp. black pepper

  • 4-5 chicken thighs, bone-in skin-on

  • butter


Instructions

1. Preheat oven to 450°F. Line a baking sheet with foil and place it in the oven as it heats up.

2. Combine olive oil and all seasonings, in a medium bowl, until it becomes a paste.

3. Rinse chicken thoroughly, under cold water, then pat dry with a paper towel.

4. Toss chicken thighs, one at a time, in with the mixture. Fully coat each thigh. Be sure to rub mixture on and under the skin.

5. Place thighs on heated pan, dot with butter and bake for 20 minutes.

7. Carefully remove and baste chicken with emerging juices. Return to the oven and bake for 10 more minutes. Remove and baste again. Bake for another 10 minutes.

8. Finish baking for another 5-15 minutes more, until internal temperature of each thigh reaches 165°F.

9. Let chicken rest for 10-15 minutes before serving.

I served these chicken thighs with some roatsed, seasoned potatoes and canned, buttered green beans. They went PERFECTLY together.
