Chicken Noodle Soup

I've been a little under the weather lately. So has my hunny and my little. We decided to make some homemade chicken noodle soup cause I could really use the hot broth right now. This recipe is so amazing! Even if you aren't sick, I promise you will still enjoy it! As always, let me know how you feel in the comments. Ingredients

  • 2 tbsp. butter

  • 1 small white onion, diced

  • 1 c. celery, chopped

  • 2 c. cooked, shredded chicken

  • 8 c. chicken broth

  • 1 chicken bouillon cube, optional

  • 2 c. egg noodles, uncooked

  • 2 dried bay leaves

  • salt and pepper

  • 1 15.25 oz can whole kernel corn

  • 1 15.25 oz can peas and carrots


Instructions

1. In a large pot, over medium heat, melt butter. Add onions and garlic and cook until the onions have begun to soften.

2. Add celery and cooked chicken. In my TikTok and pictures, you won't see the celery because unfortunately, I didn't have any. Which really sucks, because celery is the BEST in chicken noodle soup.

3. Add broth, bouillon(if used), egg noodles and bay leaves. Season with salt and pepper.

4. Bring to a boil, then reduce to a simmer. Cover and let it simmer for 10 minutes, stirring occasionally.

5. Add corn, peas and carrots, stir well. Cover again and let it simmer for another 5-7 minutes.

6. Remove bay leaves from the pot.

7. Serve and enjoy!


Tips & Tricks

  • I like to use the bouillon cube for the extra pack in flavor, but for some people, it may be too much with the broth as well. That's why this is optional.

  • So, for the chicken, we had a bag of frozen leg quarters. I seasoned 3 of them with some garlic pepper and regualr table salt, then I baked them for an hour and 15 minutes at 400°F. You can cook some in the pan or you can buy a roasted chicekn that's already cooked. Just shred it and make sure whatever you choose, is well seasoned.

  • For the veggies, you can also use fresh or frozen, if that's what you prefer. Instead of adding it for the last 5-7 minutes, I would add it in with the celery and chicken, so it cooks through completely. We add the canned veggies at the end so they don't become mushy.
