Sea Turtle Festival: Featured Treats

The festival had a great turnout! We sold so much more than we expected! We met so many cool people, made a bunch of friends and of course we ran into some familiar faces. My goal was to find a way to get to know my community and I think we did JUST that today! Thank you to everyone who stopped by to say hi or even purchase some of our goods. Everyone was so kind to us!


The Texas Sealife Center is an AMAZING cause. They are fully non-profit and they rehabilitate aquatic life so they can be released where they belong. You can visit them on the island at 14220 S Padre Island Dr. Corpus Christi, TX. It's only $9 for the tour, y'all. You should go check it out! I know we are definitely going to stop by!

Cream Cheese Brownies

These came SO close to selling out! I thought I might tweak it up a bit and hold onto it for me.
Oreo Balls
Ingredients
36 Oreo sandwich cookies
8 oz(1 pkg.) cream cheese, softened at room temperature
1/4 c. sweetened condensed milk
1 tbsp. vanilla extract
melting chocolates- colors and flavors your choice
your favorite sprinkles
Instructions
Separate the sandwich cookies from the center cream.
Add the cookies to a food processor and pulse until they become fine crumbs.
In a standing mixer, beat the center cream and the cream cheese together until smooth.
Add the cookie crumb to the mixer, along with sweetened condensed milk and vanilla. Mix until ingredients are well combined.
Scoop mixture by 1 1/2 tbsp. for each ball. Roll into 1-inch balls and place on a parchement paper lined cookie sheet.
Place in the freezer and freeze for at least 20-25 minutes.
Melt your chocolate wafers according to their package. Different kinds and brands may have different instructions.
Retrieve your oreo balls from the freezer.
Dip each truffle in your melting chocolate. Decorate with your favorite sprinkles.
Allow chocolate to harden before serving. Store in an airtight container, refridgerated.
Tips & Tricks
If your oreo mixture doesn't freeze properly, you may need a little more of an ingredient. Be sure to test a few before rolling them all out.
If your chocolate doesn't harden properly, put them back into the freezer for about 10-15 minutes.
These can be served like cake pops, on a stick. We used mini cupcake lines and served them in goodie bags.
Pecan Pie

Ingredients
1 regular, refridgerated pie crust
2 c. pecan halves, divided
3/4 c. light corn syrup
3 large eggs
1/2 c. granulated sugar
1/2 c. light brown sugar
1 tsp. ground cinnamon
1 tsp. vanilla extract
2 tbsp. unsalted butter, melted
1/2 tsp. salt
2 tbsp. lime juice
Instructions
Preheat oven to 350°F.
Press pie crust into a 9-inch pie plate; crimp the edges.
To make your filling, whisk together in a large bowl 1 1/2 c. pecan halves, corn syrup, eggs, sugars, cinnamon, butter, vanilla, salt and lime juice.
Pour your filling inot the prepared pie crust, then arrange the remaining pecans in concentric circles on top.
Return your pie to the oven and bake for 20 minutes.
Remove pie and cover with foil. Bake for another 35 minutes, until the filling is completely set.
Let it cool before serving.
Tips & Tricks
You can serve this recipe at room temperature or refridgerated.
Serve topped with vanilla ice cream. Trust me, its much better than whipped cream!
For a sweet glaze, top with a light layer of caramel sauce before covering with foil, but after the first bake.
Pumpkin Pie

While this recipe didn't sell like the others, only because I could not display it properly, it was talked about the most! So this one will remain in my own personal recipe book.
All in all, it was such a great experience. There were some super cool vendors out there. We had live music, delicious food from food trucks. It was super fun and well worth the hard work. Excited to come back next year with an even bigger BANG!
